Following on the success of taco pizza, I made two new ones this week. Normally I just cook for myself, but I made these on date night with the new guy, to rave reviews. Today I got a text saying he'd gone home and repeated the recipe himself he liked it so much. So, at least I'm not the only one that things they're super-yummy! I've included nutritional info for the pepperoni, but didn't get around to the buffalo chicken. It's probably pretty close. I used one flatbread, cut it in half, and made a different kind of pizza on each half. Enjoy.
Buffalo Chicken Pizza
- Buffalo wing sauce (I love Archer Farms from Target)
- Canned chicken
- Ranch dressing powder mix
- Shredded cheddar cheese (or other cheese if you prefer)
- Flatout bread (or tortilla)
Spray bottom of flatout bread with cooking spray. Coat flatout bread (or tortilla) with wing sauce. In a bowl, mix canned chicken with a bit of wing sauce and ranch dressing mix to taste (1/2 - 1 tsp). Cover the flatout bread with the chicken mixture. Top with cheddar cheese. Bake at 375 for 10-15 minutes.
Pepperoni Pizza
- 1/4 - 1/2 cup pizza sauce (I like Prego)
- Turkey pepperoni (I also threw on some leftover sausage)
- Shredded four-cheese pizza blend or mozzarella
- Italian seasoning
- Flatout bread (or tortilla)
Spray bottom of flatout bread with cooking spray. Coat flatout bread (or tortilla) with pizza sauce. Top with pepperoni or other meat/toppings. Top with cheese. Bake at 375 for 10-15 minutes.
Nutritional info is for 1/4 of a flatout bread (e.g., 1/2 of the pepperoni one picture above) |
I am so going to have to try this! I have almost a whole package of flat outs left in my fridge I didn't know what to do with!
ReplyDeleteHa ha. The options are endless! I've got some other ideas for maybe like a shrimp and spicy red sauce, and a pesto/chicken/goat cheese (or ricotta). It's become a game to see what I can concoct from the random stuff in my fridge! I notice Eggface from theworldaccordingtoeggface uses something like flatout bread a lot for leftovers too, which seems smart. Last night's leftover chicken becomes tonight's flatbread chicken pizza.
ReplyDeleteI Made pizza on the flat out bread last week, but since i don't like to use the oven during the summer i made mine on my eletric griddle pan. I sprayed the pan with non stick spray and heated one side then flipped it over and put the pizza sauce on the now hot side. I also heated my pepperoni and ham on the griddle. added cheese and then the rest of the toppings. by cooking the top first it made sure that the whole thing was hot and melted the cheese good.

DeleteI just found your blog today and spent the afternoon following your journey. I was a pt of Dr Aceves on 8/31. I'm 4 weeks out and have been crazing pizza. Tried your flat-out recipe tonight and it was great! I made 1/4 and ate about 2/3 of that. Thanks for the pizza fix :-)
